A Morning Bun Experiment, My Favorite Broccoli, And A Simple, Substantial Side Dish

Hi Friends,

Remember that cheater's croissant dough recipe we made in early summer? This week I used the dough to make morning buns, following the recipe from Tartine: Revised Edition, and while they didn't immediately transport me back to my favorite cafe, they turned out very well, and the children were very, very happy.

The buns reheated well on multiple mornings, and with every reheat, the kitchen filled with the smell of cinnamon and orange zest. Heaven! I'm hoping to post the recipe soon.

This week, I also made lots of broiled broccoli, following a method I shared in this newsletter a few months ago. I wish it were more photogenic, because it's the kind of recipe I want everyone to makeβ€”it calls for 3 ingredients, can be assembled ahead of time, cooks in 7 minutes, and is the tastiest broccoli I make.

Any leftovers are delicious with your morning eggs:

I hope you all have a wonderful weekend. Here in the Northeast, expected rain and high winds have canceled many of the weekend activities. Time to turn on the oven! 🍞πŸ₯πŸπŸŽπŸŽƒ

PS: It doesn't look like much, but this brown butter orzo risotto, from Sally Schneider's A New Way to Cook, comes together in 11 minutes and is so, so tasty. It's a great one to turn to when you need something fast and substantial.

Friends, hello! A few weeks ago, after I shared my struggles with this cornmeal galette dough recipe, a few of you, incredibly, made it anyway and shared your experience in the comments and via email. Inspired by your positive notes, I revisited the recipe, and after a few trials, I found the solution ultimately to be simple: decrease the cornmeal and mix the dough slightly more aggressively. I made a video, which I think is the best teacher for these sorts of recipes, and I updated the post:...

Friends, hi, how are you? Thank you for your kind notes after last week's letter. On Sunday, I drove 9 hours from Pittsburgh back to Ella's school. We spent the night in a hotel, and in the morning we parted again. No tears! Progress. In the spirit of goodbyes and first days of school, a few of you sent me this WSJ editorial. It's beautifully written and made me weep. Can't recommend it enough 🀣 This week, I baked this sourdough sandwich bread using the same technique several of you have...

Oh Friends, where to begin? On Monday, we dropped our oldest, Ella, off at boarding school. Even though I knew I would be picking her up two days later for a hockey tournament, those two days felt interminable. For the past 6 months, as the prospect of her leaving became more real, I've often found myself thinking, "It's going to be great!" And I truly believe this. But I bumped into a friend at our little co-op on Tuesday, and she asked me how I was, and I said: "Great! Everything is great."...
