A Thrice-Made Crockpot Meal, A Beautiful New Cookbook, Baked Steel Cut Oatmeal, Irish Soda Bread ☘️ & More

Good morning, Friends.

Twice in two weeks, I heard two women, my dental hygienist and a fellow hockey mom, describe their favorite crockpot meal:

Place chicken breasts, taco seasoning, a jar of salsa, a can of black beans, and canned or frozen corn into a crockpot. Cook on low heat all day.

Many of you know, I love my crockpot for beans (see here, here, and here). But as my blog's recipe archives reflect, I have had little success with my slow cooker otherwise.

So I was skeptical as I found myself shopping for this recipe. Both women called for breasts, but, predictably, I couldn't not buy thighs.

The assembly was simple, taking all of about 3 minutes to unload everything into the pot...

... 6 hours later, it was done...

... and it was delicious! And everyone loved it!

I served it with shredded lettuce (top photo), grated cheese, guacamole (purchased), and chips, and everyone assembled bowls as they pleased. Incredibly, 2 pounds of meat fed all six of us, thanks to the help of all the fixings.

But, Friends, the real miracle here is that dinner prep was essentially done by 8 am. I have now made the recipe three times and foresee it becoming a staple. This recipe is not on the blog, but I've typed it up in a Google Doc in case any of you want more guidance on the quantities. As always, I'd love to hear from you if you give it a go.

PS: My friend Colu Henry's new book, Better at Home, came out this week, and it is such a beauty! You can get a sneak peek in Colu's wonderful newsletter, and I will share more about the book soon. I want to make everything but...

... of course, I had to start at the "Pasta Pots & Pizza Pies" chapter. This one is topped with thinly sliced potatoes, mozzarella, and 'nduja, a spicy, spreadable Calabrian sausage...

... and it is delicious! More soon! But get your copy here in the meantime: Better at Home: Recipes for Big Nights In

Review of the Week

Thin & Crispy (3 Minute) Chicken Cutlets

"This was absolutely AMAZING!!! I then topped it with a little passata, some shredded mozzarella, and popped it into the oven for a few minutes for a fast chicken parmigiana. Sensational!!! The combo of Dijon and mayo added a delicious flavour with less effort. Thank you! "

Greetings from Buffalo, Friends! I am here, of course, for a hockey tournament, and, incredibly, the sun has been shining, a gift as every game is being held at an outdoor rink. Yesterday, as I watched in my fleece-lined leggings, wool socks, and down vest, I was sweating! I had to strip a layer! How nice?! This week, I made a chocolate variation of this favorite whipped cream cheese frosting. If you are unfamiliar with this recipe, let me quickly review its virtues: it calls for cold cream...

Hi Friends, This week my oldest daughter turned 16, and we celebrated with cake and a trip to the DMV, which was shockingly painless. While she won't be making any solo trips to the grocery store or shuttling her siblings around for another six months, the prospect of having another driver in the house is thrilling. This week, too, the giant sandwich roll experiments continued, and I've finally posted the recipe. As noted in previous newsletters, this recipe is inspired by Jim Lahey's...

Friends, bonjour from Montreal! I am here with two of my kids, of course, for a hockey tournament, but with goals that mostly concern food, namely crepes and bagels, both of which we've found and devoured. Our hotel is located in Chinatown, and we arrived Thursday evening as nearly everything was closing, but found a spot that kindly took us in. Bellies full of dumplings, orange chicken, and spring rolls, the kids were thrilled. This week, I made a soup I hadn't made in ages. It's made from...
