Oprah's Turkey Burger Recipe + A Favorite Summer Squash Salad, Peach-Frangipane Galette & More

Last night for dinner I made Oprah's turkey burgers, which I learned about via Mindy Kaling several months ago and have made half a dozen times since as my family loves them.

I am typically not drawn to recipes calling for ground turkey, which is on the lean side and which can taste dry, but this one, which includes mango chutney, apple, scallions, curry powder, and other seasonings sounded so good. Plus, Mindy made it look so easy.

And it is! In short, you purée all of the seasonings in the food processor, giving the cilantro, apple, and scallions a rough chop before doing so. You then combine the herby, spiced purée with the ground meat, form your patties, and grill away.

I first made the burgers on my grill pan indoors, but in the past few months, we've been using the outdoor grill and these grill mats, which one of you introduced me to, singing its praises for pizza, which I have yet to try, but which work beautifully for turkey burgers, which are on the soft side.

The original recipe calls for 1.5 pounds of ground turkey, which is kind of annoying because ground turkey typically comes in 1-pound packages. Last night I scaled the recipe up by a third — for those of you challenged by math, enlist your middle schooler to help with this calculation or, as I learned, multiply each ingredient by 1.33333 — which will give you the quantities needed for 2 pounds of meat and which will yield eight nice-sized patties (roughly 5 ounces each).

I love these burgers with tzatziki though homemade raita would be delicious, too. Last night I served the burgers aside this raw summer squash salad, a recipe I love this time of year, one that is especially good with the first summer squash of the season.
